For 3 generations, our family has been passionate about this place and its history. Today, Laurent Rossi, the grandson, dedicates himself to this noble craft.

Olive Groves in Provence

Producer in an exceptional terroir:

In the Alpilles, we produce Baux Valley olives on nearly 25 hectares. The olive tree has long found its preferred land. A tree of light, a symbol of vitality and longevity, it spans centuries, battling wind and weather. On the tree, the fruit spends the entire summer soaking up the sun. It ripens in autumn and is harvested at the first frosts of winter. It is then that, imbued with the scents of the Alpilles, the olive from the Baux de Provence valley reveals its palette of flavors.

Miller in an exceptional place:

It is in this vaulted building from 1744 that we produce our olive oils. From mid-October, we harvest our olives and receive olives from the olive growers of the Baux Valley. They are destemmed, washed, and crushed to obtain a paste from which this pure, premium fruit juice is cold-extracted: the olive oil of the Baux de Provence Valley. It is the varieties that compose it (Grossane, Salonenque, Verdale, and Béruguette) and the master miller’s expertise that give our olive oil its authenticity and specificity.
